A healthy, low-carb alternative to mashed potatoes. They’re light with a sweet, nutty note from the garlic and a not-so-secret ingredient to make them extra creamy!
5 cups cauliflower florets
1 Garlic clove, sliced thinly,
3 Tablespoons milk
3 tablespoons B-well Garlicnaise or B-well Reduced Oil Mayonnaise
½ teaspoon salt
Cracked black pepper and minced chives to taste
Place 2 cm of water in a large saucepan. Add cauliflower and garlic and bring to a boil. Reduce the heat and simmer covered until tender, about 10-15 minutes, stirring occasionally.
Drain the cauliflower and garlic and return to the pan.
Mash the cauliflower mixture to desired consistency. (We use a blender at this step to make our mash velvety smooth, but this is completely optional)
Stir in milk, mayonnaise, salt, and pepper. Sprinkle with chives.
